I dunno if I would call Skyrim immersive, fun sure but the immersion was regularly broken by some or other form of Hilarity or Rage due mostly to bugs. Also Skyrim's base design is flawed as a roleplaying game, any game that lets you join ever faction or wantonly murder people with out any real consequence on the larger experience will always fail at immersion due to our brains telling us, unless you are delusional or psychotic, that the real world doesn't work like that. Fallout Vegas on the other hand while more immersive than Skyrim for me personally was near unplayable at launch, I should know, I reviewed it. However now, with the ultimate edition and a whole host of other content and a few patches, it is a far more enjoyable game. It does still suffer from the same issues as Skyrim, Fallout 3 & Oblivion the immersion breaks due to either bugs or ingame logic. As someone who spends my evening mapping out quest paths on flowcharts for my Gamedesign course I understand why some quests are structured they way they are but that doesn't mean its right.
For me personally the apex of Roleplaying has always been plot, while the above mentioned titles all have reasonably interesting plots narrative is far from their strong point. My favourite roleplaying game(s), games in which I play a role and in which I shape my character and the gameworld, I would say the Mass Effect Trilogy, regardless of the copious amounts of Internet Rage that have been heaped upon it (a topic we WILL NOT be dwelling on here) it remains a testament to narrative in a video game. Oh yeah The Witcher 2 is a tie with Mass Effect (Thanks C-Bear dunno how I forgot about it). It has its flaws but overall an excellent game.
I also recommend Kingdom's of Amalur as a good RPG.
Mass Effect trilogy, The Witcher 1, Neverwinter Nights 2 (can't remember when that came out, but I think it's within 5 years :P maybe 6...). Divinity 2 (the sequel to Divine Divinity) is also very good, but takes quite a while to get into.
Skyrim is great! Love it! It has a few flaws, maybe, but nothing that's going to keep me from playing it on and on again...
The Witcher 2 is ... Well ... Damn near perfection! IMHO.
But Mass Effect 2 for me... It was the first true RPG love... Especially after playing Alpha Protocol... ESPECIALLY after playing ALPHA PROTOCOL!
It was a game like Alpha Protocol that made me realize how much better Mass Effect 2 is as an RPG!
More enjoyable! More heart-felt! More immersive! JUST PLAIN BETTER!
Hell! The Elder Scrolls IV: Oblivion, my first ever RPG was more enjoyable and memorable than AP was! OMG!
Ya, I also love Skyrim and the latest Fallouts, I enjoy how you can go from a nobody to a ridiculously powerful demi god. People hate that but I dig it.
The Mass Effect series will always be special to me too. Blown away by the story and universe they created with that series.
Yeah, remember that part in Fallout 3 when you first exit the vault, and you see that huge panorama of desolate landscape just begging to be explored? That was a striking moment, and sure enough the game followed through. That was a highlight.
Another game worth mentioning would be Atlus's Persona 4. If you havn't played it yet, get the rom or something, like, now. The dungeon crawling may be repetitive, but everything else is just pure zany fun.
For me it's Dragon Age: Origins by a mile for a pure RPG. Otherwise the Mass Effect series.
As the OP loves Bethesda, I love Bioware. :)
Mass Effect, Dragon Age and Witcher 2
Mass Effect was my first RPG and after finishing that a couple of times, I went out hunting for similar games and the three I just mentioned are the ones that stuck. Although, nothing quite measures up to that experience of playing Mass Effect 1 for the first time.
Fallout was awesome, but just too much. Too many choices, too many bugs, too long, etc. It is great for a while, but later I get burned out which is why I still haven't had the motivation to continue with Skyrim.
The epitome of an RPG is the massive length and scope of the game. Games like ME are not real RPG's because they are linear and short and, in my opinion, just plain shit.
The more scope, the more time sinks available, the immersive story, that is what equals a great RPG.
Not sure how you can call ME short, think my average for those games has been around 30hrs. Mine time is no factor for quality. Also if you are going to label other games as shit then you should at least provide some concrete examples of what you deem to be good.
Not Diablo 3, Not Fable 3, Not, Mass Effect 3, Not Dragon Age 2.
Fall out series, Guild Wars, Dragon Age, Xenoblade Chronicles (Wii), Zelda Series.
Another big thing for me in RPG's is the ability make choices that matter. That every decision have consequences. I think the best game to do that is the mass effect series
Xenoblade Chronicles and The Last Story.
I don't feel any kind of connection with a WRPG, the art style's are utter shit to me. I tried ME3 on my PS3 (got it on sale) and it was the worst fucking thing I ever saw in my entire life. Final Fantasy X on Ps2 had better graphics and ran smooth, it wasn't such a steaming pile of broken antelope droppings thrown together.
After 2 hours of playing ME3 I couldn't bare it anymore and archived it in the bathroom.
**Demon Souls is also worth a mention**
Played a lot of RPGs and gotta say that the first Mass Effect really stands out. I think few games got it right to create such an immersive atmosphere. Also recently got into Dragon age and liking it.
Dragon Age Origins, Witcher 2 and Skyrim. Each one for very different reasons.

I really loved Dragon Age Origins,especially the DLC's.
I say wait for the buldars gate 2 hd remake. I never played it but people say it was one of the best.
I really enjoyed Risen 1, hence my avatar.
I loved the story in it, ending was a bit bad but the world and what happened in it really got me sucked into it. I loved the combat in it as every fight became a challenge until you were all powerful. Only game in the last few years that I actually finished and played again in the rpg genre.
Baldurs Gate 1 and 2 were both incredible. I'm super excited for the BG1 enhanced edition.
Witcher 2 and Dragon Age Origins. Nothing else really comes close. It was such a shame what happened with Dragon Age 2.

My favorite RPGs are:
Skyrim- I used to play this like 6 hours a day (that's actually a lot of time for me)
Mass Effect (the whole series)- Part 1 had me addicted. Part 2 fixed problems, but added a few. Part 3 was too "Gears of War with powers" for me, but I loved the whole series. It felt like an actual universe-the genophage was pretty interesting.
The Witcher 2- one of my favorite games of all time. It was tough, but still enjoyable. The story is amazing and witchers are badass

I wanted to come and say Baldur's Gate 2, and then I felt old. :(
Skyrim was good but i got bored, Kingdom's of Amalur was really good i enjoyed the pace and combat style to bad they went bang. more and more over the last few years i have noticed i tend to get bored with rpg's its just not as innovative as it used to be they don't draw me in, now that could be because i got older and used to the general game mechanics being used over and over and over by various titles or maybe gaming companies just stop caring and want to make money.
1. Dark Souls by far, with the online component your always sure to have a challenge and no matter what level you are the enemy can always kill you if you mess up. Continues to impress a year later and the upcoming DLC is sure to breathe more life into the title.
2. Dragons Dogma - One of the best I've ever played, put in over 160+ hours, lots of content and exploring, challenging enemies and open world.
3. Demon's Souls - Just like it's successor an amazing game that still has a strong online component to it. However the more open world approach and overall upgrade in gameplay mechanics puts it's successor above it.
4. Mass Effect 2 - One of the best games I ever played and one of the few where I felt an attachment to the characters and actually cared what happens to them.
I enjoyed Deus Ex: Human Revolution quite a bit. Its cross-genre, and I know its not as good as the original, but its still pretty good. I liked the atmosphere the most.
Borderlands deserves a mention as well, the ending sucked, but it had lots of character, a decent game.
The Witcher 2 hands down. Story, graphics, dialog - all of it is great although it might take a while to get used to the combat.

I might be a bit biased, but if I had to name the one best RPG of the last 5 years it would definitely be The Witcher 2. Really glad to see so many others agree with me. :p
Other RPG's that stood out for me during this period include: Demon's/Dark Souls, Mass Effect 2, Fallout: New Vegas, Borderlands (I know it's primarily a FPS, but it has skill trees and loot), Dead Island, Skyrim, Kingdoms of Amalur: Reckoning and Yukuza 3 & 4 (many might not consider them RPG's, but I do - there are random battles, levels and a LOT of story, etc.).
Dragon Age Origins had all the elements of a good RPG, but it wasn't actually a good game, imo. The game was rather tedious. Whereas I thought Neverwinter Nights 2 had too much story and too little action, I thought DA:O had too much action, too little story.
And the story was pretty lame at that too.
The Elder Scrolls Skyrim and Witcher 2.
Give it a few weeks and it will be Baldur's Gate: Enhanced Edition. Ha!
