Have to agree with Havoc, it is not the easiest thing in the world. As a fish keeper, we have debated the best ways to euthanise sick fish in depth.
Ironically the best ways is to: Chop the head off after knocking it out on a rock, (it is also why you see some fishermen bash fish heads against rocks when they have been caught) - leaving the fish still edible.
The way most fishkeepers do it now is by putting clove oil in water, add the fish - its like an anaesthetic. They fall asleep (it is also how most people are able to treat fish directly on affected areas) the more clove oil the quicker the fish dies.
The old way was to put tropical fish in ice water - they believed the ice water shocks the system and killed them fast. This is still used to a lesser degree, the other way was just to stick the fish in a tub of water in the freezer. They believe the fish just slowed down until the heart stopped.
