If you do...

Ignore Fate/Stay Night completely. It never existed, after Unlimited Blade Works was announced it became invalid - this it not to say it is a bad series it's good on it's own but became less valid after a series reboot.

Start with Fate/Zero which is the prequel to Fate/UBW (it takes place 10 years prior to UBW and sets up the characters nicely so that some may return in UBW) then Move to Fate/Unlimited Blade works, which is the remake of Stay Night.

I managed to get a whole lot of films and a few series out of my way including;

The Wings of Honneamise - Sucker for GAINAX, a bit slow but very good
From up on Poppy Hill - Classic coming of age film
The Wind Rises - Very solid Drama.
Beyond The Clouds The Promised Place - snooze fest, good visuals
Ponyo - Think Finding Nemo for anime
Wolf Children - Amazing
Colourful - Slightly different from most but works out so well in the end.
Nausicaa of the Valley of the Wind - Not as good as most critics make it out to be.
King of Swine - Korean and slightly disturbing
Only Yesterday - Ghibli at it's best.
Tokyo Ghoul - Death by censor, wait for BD's.
Persona 4 - Fan of the game then a good watch
Barakamon - Solid slice of life anime.
Fate/UBW - More speech and character development in part 1, part 2 will deliver the action.
Occult Academy - OK, I guess.
