I find that shows that are exciting and have easy to follow tropes tend to become popular. Code Geass, GATE, Kill la Kill, Cowboy Bebop and so forth. The more obscure ones like Humanity has declined, Genhisken, Yozakura Quartet seem gain less of a larger fan base.

Although Bebop has a fairly simple plot, it's characters are fairly interesting themselves, which makes it a great starting show as well as a show to pull apart and critique. I personally hold a strong opinion for Shinichirō Watanabe's work. He has only ever made amazing things.
