Just make a dedicated server, that's what I did at the office.

open the server config file and change all the things in there that you want changed, also there are gametype, maprotation etc configs to look at. Once done, create a shortcut of your iw3mp.exe and add the following in your command line, so it represents something like this "D:\Games\COD4\iw3mp.exe +set fs_game mods/swm +set Dedicated 1 +exec codserver.cfg +map_rotate

The +set fs_game mods/swm, the swm bit should resemble your mod directory's exact name, so if you renamed the starwars mod to something else, replace swm with that. Note also the server.cfg file name, if you have that renamed to anything else, remember to specify that name rather.

Now run the exe, this should start up a cod4 dedicated server, which you can even join on the pc you are hosting it from, and the rest of the lan can connect as normal
