It's an interesting point of view that Robilliard presents. I think the fact that CoD and CS style violence simply doesn't fit in the Star Wars universe would've been answer enough; we didn't see any of it the films, did we?
Regarding his point that game designers/developers should act with some social responsibility: Isn't that what the ESRB is for? To take the burden of them, so that they can create the games they want to create? We have similar systems in place with film, and it works well. The creators of the film have to weigh artistic choices in the portrayal of violence with a potentially smaller audience that comes with a higher age restriction. Shouldn't the same hold for games?
I don't think CS and CoD style violence is what he is talking about, CoD and CS are still very cartoony/video 'gamey', he is probably talking about stuff like God of War and other ultra violent games which I can't think to name atm.
