You don't lose items when you die, you only lose unspent souls. If you need some advice then hit me up, I'm fairly clued up after beating the game a few weeks ago.
BTW the dude on the bridge is the Kite Dragon and you don't need to fight him, just run across and stick to the right and go down the staircase.
Also tail = drake sword, don't miss it. :P
