I haven't even played around much with it but the default one it gave me was quite nice. Disabled the ugly blur though. Then again, in any game I usually go out of my way to disable blur. It's just something I never experience in real life so I don't want to experience it in a game.
What is your currently set on? And what other settings have you used?

Yeah, the DoF (blur) is the first thing I disable. It's just taken too far.
With loading the latest EDFX the other night I see there's a new profile, "EDFX 2.5.0.6 Deep Space Black Edition profile" - I have been using it this week only and finding it rather nice. I have also used GemFX and particularly fond of Insomnias profile.
So let's see, here are some of the changes coming to Elite Dangerous 2.1 patch (1.6 for basegame players (I think)) these changes are the ones that are lesser known, at least to me:
Map revamp, bookmarks and route plotting being 2 main new features.
Then there's the visual icons for community goals that will be visible in the galaxy map and system map, and with that you should be able to join the CG missions from any station IIRC.
Planetary surface improvements and SRV improvements.
SRV being the tracks that will be made while driving your SRV around.
Planetary improvements being better craters and canyons and other visual cues on planets.
Ship Outfitting!
This one is very new and exciting to me, a complete overhaul of outfitting... perhaps even some new visuals for modules? In the one newsletter with the SRV tracks picture we can see the ship has a new visual module on it that looks like a dish of sorts. Perhaps this adds to that?
Exploration
Apparently there are some new things coming our way, and the current form of exploration might change. Whether this will be part of 2.1 is not confirmed but I do have some details on what they meant:
Currently if focusing on exploration we rarely fit weapons on our ships as they are heavy and affect jumprange too much. Well, according to Frontier it's going to become dangerous to explore without some form of defense...
Extra Trivia:
Apparently players have only discovered about 0.0077% of all the systems in the galaxy. And according to Obsidian Ant it would take about 250 years of constant exploring for us to explore a full 1% of the galaxy. (Not sure how he came to this conclusion)
