There is absolutely no way that I would know what was my very first Youtube video even watched. I've watched way too many videos to think about the very first one. Can't even remember what the first channel I subscribed to was

Pretty positive the first vid I watched was the Assassins Creed 1 dev diaries. That or the Superman Returns dev commentary.

Assassins Creed 1 at the time was mind blowing. It gave me a sense of wonderment of note.
