The stereotyping in this thread makes me sadface.

I started my wife on Crash Bandicoot, this was 12 years back on the PSX.
Now, she plays everything I play, we have all the major consoles and some very rare minor ones.
Pwns me in Starcraft, Warcraft,Plays sniper support in CS, Used to be ranked No 1 on iGame Hardcore for CoD 4 and is generally as good if not better at most games we play.

My point with all of this, be careful what you wish for, there might be a natural gamer lurking under the hotness
To answer your question though, on Xbox, Try the Lego series titles if she is just starting out, co-op gameplay and a lot of fun for casual players.
We are currently finishing Lego Batman in between Resident Evil Darkside Chronicles on Wii and Left4Dead 2 Sessions on PC
And yes, as others have stated, GH is a must

thank you to everyone who's been giving me suggestions, ans please keep them coming!
just to reply to the guitar hero suggestions... my wife and i aren't big music lovers/fans.
to tell you the truth, we hardly ever have music playing around the house/car.
so that'll probably be 'a miss with the missus'... and the mister!

I asked her if she'd play a race game, and she said ok. Let's see how that goes.
And i've wanted to get Tiger Woods anyway.
(slightly off-topic : Anyone know if Tiger Woods 11 is worth waiting for? )

    EDIT:
I've just been checking out games on IGN. Anyone ever played "Viva Pinata"?
Looks like the ultimate 'cute' experience!

Well I think most of the advice is pretty spot on... obviously you get woman who likes the more violent games.... but if they currently not into games.... which is what this thread is about... its pretty logical to assume they are like the average woman .... and in this case the easiest way to get them into gaming is to play the "cuter" + "simpler" games... and then show them the more male dominant games.

Guitar Hero is the only good one I've found so far, other than Buzz on the PS

guitar hero may be a bit hard for some people.
my gf gives up on guitar hero very early
another good choice will prob be fighting games like dead or alive. doesnt require very technical timing etc (unlike street fighter)
although my GF seem to like halo
