First, the i7-6700k is listed as supporting up to 2133MHz RAM. What, if any, is the benefit of putting in higher clocked RAM? Say, 2133MHz vs 3200MHz?

Secondly, the motherboard supports dual channel DDR4. Is there any benefit of using 4x4GB ram vs 2x8GB RAM?

    Thanks in advance
The motherboard will clock down the RAM speed to it's maximum specified speed of the CPU (2133), so if you put in 3200 it's going to automatically bump it down to 2133. You can overclock the RAM on the motherboard to run at the specified speed of the RAM, since it has support for it. Other than overclocking, there is no real benefit from faster RAM in games.

With regards to RAM module sizes, it's down to personal preference. I prefer 2 x 8GB chips as opposed to 4 x 4GB ones. Also make sure that, if you do take 2 x 8 that each chip is in the same colour slot. 1 in each the gray slot, or 1 in each of the black slots.
