In the old days the butcher (single owner type) would take on a single appy and teach him all the tricks of the trade, and the bloke wouldn't get anywhere near the cutting board unless the boss was happy with his skill. But it's considered unskilled labour, so any Tom or his dog can apply - and anybody gets pushed into the butchery - the small butchers need to take people who will accept low paychecks or they can't compete with the big players (Shoprite et al) who don't give a crap either way.

Woolies has never skipped on quality though ... but yes, the prices are frightening.
My grandfather was a butcher. A very good one must I say. He won an award.
