I would wait a few weeks, Coffee Lake (8xxx series CPU's) is releasing next week (at least overseas), so we should be getting stock soon as well.

Might be a good idea to see how the price vs performance plays out. Coffee Lake is also working with a new chipset (Z370), and the Coffee Lake chips are not compatible with previous chipsets (Z270), even though they have the same LGA1151 socket.

From what I've read, Coffee Lake might be a bit more expensive, however you will also have the option of quad core i3's, six core i5's, etc. if you would be so inclined.

Likewise, wait a couple of weeks until Coffee Lake lands. You'll likely find that the previous gen kit will have a reduction in price.
 
Thanks for the input, I will give it a few weeks. In the mean time I've been thinking about some other options.

For gaming would you:
A) i5 + GTX1080 = R20k
B) i7 + GTX1070 = R20k
C) i5 + GTX1070 = R15k
