I just found out that electrical interference between my cellphone and my ipod (specifically, the ipod volume level) is a real thing.
 
Wow i have flown like 10 tiems in my life and out of the 10 i have had 2 bad experiences

1. was the flight back from inhambane in mozambique the plane was delayed due to technical reasons and when it arrived it was low on fuel .... but thats not the scary part the scary part is inhambane airport doesnt have run way lights so as it started gettign dark i saw there firetruck(red bakkie with a tank on the back) driving down the runway lighting coconuts on each side of the run way(before you call BS i actually have it on video) we took off with that
 
OK, not a problem but a feature.
Apple designed the iPod to be interfered with by any cell phones and tablets not of the Apple brand. This is to guide people into the full Apple family of products.

Either way, it's terribly annoying. Randomly bumping the volume to max, when I'm using my cellphone near my ipod results in ringing ears. Max volume I can normally listen to is around 50%.
 
Also, if you order Halaal, the other passengers tend to leave you alone. Just don't make any sudden movements when taking something from a pocket.

Hahahaha Yea but that has a bonus no one bugs you on the plane :P

quite strange. when I'm in the car my iPod lies on top of my phone and I've never had this experience

It's bloody strange. Been testing a bit (with earphones out), and it only really happens when sending and receiving data (on 3G and Edge). The volume changes are completely random, and increase and decrease until the phone is moved away. Max range is about 15cm.

Incidentally, it's one of the original iPod videos.

Now to figure out if it happens when when the iPod controls are locked.

Have you paired / setup bluetooth between the devices? perhaps like when you pair it with a bluetooh deck your calls take preference over the music?
