LoL my sea battles are a bit chaotic if I have to try and control more than one ship - but I will only fight a sea battle if the 2 sides are at least even in fire power.
In Empire you could get away with beating much stronger forces by using sail and grape shot to weaken stronger opposition but you do not seem to be able to do that as much in Nap.
So if I'm facing a much stronger navy - I normally run/sail away.

Have you had a look at the trophies list - I laughed at the psycopathic ruler?? - Declare war on 10 countries at the beginning of the game and never make peace with them.
