what about forza ?
Forza is still my bae, but as a sim, this really takes the cake. It's so fleshed out and so much passion has gone into it.

The same could be said for Gran Turismo, referring to the bolded part of course. Kazunori Yamauchi spent years developing the initial GT game. That takes passion I'm sure.
Haven't played AC so I honestly can't compare the two though.
