Wow such amazing mods. The Deus Ex one is at the moment downloading, as it's my all time favourite game, now with an HD overhaul...

I went for a realistic overhaul with my mods.

You have to Sleep, not just wait. Otherwise your stats, leveling and perks suffer.
You have to eat and drink. See above.
You cannot just jump in water, run around with flimsy steel armor etc. Skyrim is a cold place so you have to craft clothing items like Fur or hide to keep you warm, build tents to sleep in out in the wild, build fireplaces etc. You can get sick, get Hypothermia etc, just as in real life.
Quicktravel completely disabled.
All map markers disabled, hence "better quest objectives" you have to actually read your quests now, and take note like Morrowind etc.
Heavily increased difficulty. Even if you are a high level character, a single arrow to a vital part of your body that is unprotected can Kill.
Dragons are now much much harder too, making them the legendary creatures they are supposed to be. I've had battles with Wyrms / Dragons that lasted 10+ minutes.

I really like this type of modding.
Adding realism like this is awesome fun for me.
Allows me to be a survivor without actually getting near death ya know.

Love it too. The above combination of mods really does the trick for Skyrim. I bet there are better mods than the ones I listed, but too me, the way I configured them gives the perfect balance between survival, harder combat and Enemies, slow leveling, exploring while keeping the gameplay fun. I tried to not go over the top with anything.

Best mod I've played is The Stanley Parable a half life 2 mod with I think 4-6 different endings
