It works like any other bundle on Humble Bundle.

You pay the amount (in this instance it is a single fixed amount) and you get Steam keys for all of the games in the bundle, so you activate all the games on Steam.

Sometimes there are Uplay bundles, but not very often. Mostly bundles have different price tiers. They will give a few games for, lets say $1, then a few more (additional) games if you beat the average (ie the average price that everyone else has paid who has bought the bundle, usually around $6) and then some more games for a higher price.

I only buy a bundle if it contains a game (or games) which I actually want.
