For quite a while now there have been rumours of Zombies DLC for GTA5 like Red Dead Redemption has. The biggest tell would be a currently unused piece of code in the DLC menu to select a game mode called SPZOMBIES.

I don't know. I know they put the ufo Easter egg in because of the rumors of aliens in gta san andreas
 
Watch dogs does have zombies though in the one digital trip. Robotic cyborg zombies though but still it's pretty much still zombies.
