1) Yes, you can actually fit the Z-Drive on the board and it will work. Potentially, one of the GFX cards will run at 8X though, since the Z-Drive will take up PCI-E lanes. No real loss really, the sheer bottleneck created by four gfx cards would be more of a concern.

In case you're concerned about it not physically fitting, due to dual slot requirements, by adding WC you're essentially turning it into a single slot card. If you're really picky, you could just use something like this:

2) Yes yes, Xeon processors are needed. I was too lazy to go fetch a link. The price is generally the same (+-R500) between Xeon and regular processors though...
3) Yes, the sound card will fit. You don't need a 1X PCI-E slot. See point 1, as well.
4) My thermaltake toughpower 1000W has survived more than 3 years including a number of close lightning strikes and regular brownouts. If you're going to make a statement like that, back it up with some reasonable evidence please. Maybe a failure rates figure?
@ Dice. Rather go with the 30" monitors. With all the extra monitors, you'll get the equivalent of Eye-finity on Nvidia, which is damn cool. Not only that, but despite the huge picture on the projector, it's still only a 2048x1080 resolution. The displays are, individually, 2560X1600, and obviously double that when you have two of them. Heck, you could add a third even... Also, R300k for a projector? Atleast this PC is (marginally) within the realms of reality
1) If you used those watercooling blocks then it would be possible cause most blocks still take 2 slots. So stand corrected there.
2) Ja those Xeons are basically the same CPU just with a different name. Differences are minor just pointing it out
3) Concern with the sound card was physical again. Know the mobo can run 6x8 and 1x16
4) Okay the fact that your PSU has survived does not mean it is any good just reliable.
Any way here are some performance stats:
The Antec 1200W has 6 x 12V rails all rated at 38A
The Thermaltake 1500W has 4 x 12V rails with 2 rated at 20A and the other 2 at 40A
The Antec has Ripple/Noise of less then 120mv
The Thermaltake has 240mV
The Antec is the only PSU with capacitors on the cables. It is also newer technology as it was released almost 3 years after the thermaltake.

Pop 3x 5970s in there and then it is the ultimate rig. You may need to get some flexible PCI-E slot extensions to do that though.
Its runs significantly cooler (overclocked it will top out at 90C if you push it), consumes significantly less power and on top of all that is still the fastest card on the market (which is what we're really looking at here building an ultimate rig). However, 1x 5970 is going to cost more than 1x GTX 480.

Found this article on Guru3D related to your dream machine... They estimated about $5000 total.

We all have our own ideas of what constitutes a Dream Machine.
I reckon I could make my machine really special [from my point of view]
for under R10 000. I'd probably keep my existing case, hard drives, input
devices, speakers and monitor and replace my motherboard, CPU, RAM,
soundcard
and if I had enough left over look at getting a new graphics card.
New CPU would be an Intel Core i5 750
RAM would be 2x2Gb sticks of budget DDR3
Motherboard would be an ASUS P7P55 LX
Soundcard would be an ASUS Xonar DX
Graphics card.....Ooooh....maybe a GTX 470
