Here's a question for the more veteraned of you.
Why do some classes start on different soul levels, and what are the benefits/downfalls of this?
You can think of it as kind of a difficult setting for the game but it's basically only there to encourage different play styles.
At the end of the day it does not matter what you pick you mold the character your own way once you start leveling.
At the end of the day there is no real benefit/downfall.
Sure starting with a armor set with a better durability and a sword that does decent damage (Warrior) is pretty cool but better starting stats and only a leather nappy is awesome if you want to have a bit of a level boost (Deprived). Like I said it boils down to different play style no more, no less. Its just different base platforms for what you want to reach. Or you can just grind a bit and reach it anyway with any class.
I remember back in the day when the Pyro craze was a thing and everyone was running around burning everything to ash. The Pyromancer was the thing to start with so that you could start burning things quicker. Then the stats on The Great Scythe was uncovered and everyone started with the Thief class for that extra Dex bonus for max damage. It was all just different play styles.
